Our oil is Spanish coming
from the Arbequina Olive. It is 100% extra-Virgin olive oil. What is balsamic vinegar and how do you make it? Balsamic vinegar is cooked
grape juice coming from a very sweet Italian grape. When the grape juice is
cooked, the sugars in the juice naturally caramelize and that is why real
balsamic vinegar is dark. Real balsamic vinegar is aged in barrels and
that is why, through natural fermentation, the vinegar is thick. The fake
balsamic vinegars are made from distilled rice vinegars and then caramel
flavored and sweetened. This imitation vinegar is very cheap and it is
incredibly sharp when eaten. Real balsamic vinegar is not sharp due to the fact
that it was barrel-aged. Our balsamic vinegar is produced by three brothers and
one sister right outside of the city of Modena, Italy. The main grape is
Trebbianno and is a very sweet grape that produces wonderfully sweet, balsamic
vinegar. John Spenger Foods proudly imports it in 264 gallon containers, which is why we can sell
it for such a reasonable price. Normally, real balsamic sells for $2 for every
year it is aged. We can sell it for half of that because we are not importing a foreign
label. Companies that import the products in the foreign label are taxed
heavily. That is why they become so expensive on the shelves of gourmet stores. What is the shelf life of the products? All of our products that
have the infused garlic oil in it have a guaranteed shelf life of two years. The
vinegars have more of a shelf life due to the fact that they are
already vinegar. Where is your company located and where are the products made? Bistro Blends Orlando is located in
Longwood, Florida, a northern suburb of Orlando. John Spenger Foods
product kitchen is in the Napa Valley with their main office is in Miami Beach,
Florida.. Is John Spenger Foods related to the Spenger Family restaurant in Berkeley, California? John Spenger is a
great-grandson of the founder of the restaurant. The restaurant was sold, but the family still owns the land and is the new company’s landlord.
John’s grand-parents still live upstairs above the restaurant in the penthouse. Do you ship Bistro Blends to where I live? Yes, we ship throughout the
continental United States via UPS or FedEx ground (unless otherwise arranged). You can
place orders right here on the website or fax/phone
orders to 407-650-2629. What are the calories or fat content of your products? All
the vinegars are fat-free, always, and some have more calories than others
depending on the ingredients. The Heirloom has only five calories. The vinegars
with the purees have more calories due to the natural sugars in the purees. This
information is important for diabetics. Why is there no caloric information on the product labels? John Spenger Foods is
not required to put nutritional information on any and/or all of the products if
they do not sell more than $1 million dollars worth of product or have more than
one hundred employees. This may change as the company grows. Are these all original recipes? Yes, these are all John
Spenger’s
recipes. He started with the Bistro Oil while working at Scala’s Bistro in San
Francisco, CA. He used to offer it with the bread as an accompaniment and so
many people requested to purchase it, that he started to
sell it on a retail basis. He started with his first farmers market in April of 1999.
