Autumn is in the air and those lazy days of summer, when we might actually sleep in past dawn, are now past. Our high-schooler has her alarm set for 4:30 AM so she can get her motor running and catch the school bus at 5:40 AM. I think she must still be asleep much of that time and forgets that we are "the parents". She actually talks to us over breakfast - sometimes.

September means back to school, volleyball practice, college schedule anxiety and homework at our house. It also means there is limited time for dinner preparation. We still try to make dinner time a family time, so quick and easy is the order of the day. Try this recipe with a simple green salad. A glass of wine for the adults with lemon sorbet for dessert and even 3-pages-of-pre-calculus-homework nights can be special.

Bistro Blends Super Picante paste is VERY hot so a little goes a long way. The rocoto peppers from which it is made are a South American favorite. Add it to vegetable soup or chili for some extra heat.

Picante Roast Beef

Coat a beef roast with a thin layer of Bistro Blends Super Picante Pepper Paste and roast at high heat (450 deg.) for approximately 15 minutes to form a crust. Turn the heat down to 300 degrees and roast until the internal temperature is 160 degrees (time will vary according to the size of your roast). Let the beef rest for 15 minutes before slicing very thin. Serve with garlicky mashed potatoes and green beans.
